Ingredients
2 boneless, skinless chicken breasts (about 8 ounces each)
2 tablespoons olive oil
1 tablespoon ranch seasoning
1 package (14.1 ounces) artisan flatbread (2 flatbreads)
1/2 cup ranch dressing
1 cup packed shredded romaine lettuce
1 large avocado, peeled, pitted and chopped
3/4 cup chopped Roma tomatoes
1/2 cup crispy fried onions
Directions
  1. Prepare outdoor grill for direct grilling over medium heat; rub both sides of chicken with oil and seasoning. Place chicken on hot grill rack; cover and cook 10 minutes or until internal temperature reaches 165°, turning once. During last 3 minutes of cooking, place flatbreads on hot grill rack; cover and cook 3 minutes or until grill marks appear, turning once. Transfer chicken to cutting board; let stand 5 minutes. Cut chicken into 1/2-inch pieces. Makes about 2 cups.
  2. Spread flatbreads with dressing; top with lettuce, chicken, avocado, tomatoes and onions. Makes 2 flatbreads.
  3. Cut each flatbread into 6 slices.
