Ingredients
2 carrots, peeled, in matchsticks
2 daikon, peeled, in matchsticks
¼ granulated sugar
1 Tbsp kosher salt
1 water
½ rice wine vinegar
1.5 lb Smithfield Applewood Smoked Bacon Fresh Pork Loin
3 Tbsp Wholesome Pantry Organic Real Mayonnaise
1 bunch Wholesome Pantry Organic Cilantro
1 jalapeno, sliced
1 cucumber, sliced
2 baguettes, halved
Directions

To make the Quick Pickles:

  1. Combine the carrot and daikon matchsticks in a medium bowl. Add the sugar and salt, and massage into the vegetables until fully absorbed.
  2. Transfer into a clean jar, and pour the water and vinegar over top.
  3. Screw on the lid, and refrigerate at least two hours, or overnight.

 

To make the Banh Mi:

  1. Prepare the Smithfield Applewood Smoked Bacon Fresh Pork Loin according to the package instructions. Make sure it reaches an internal temperature of 145ºF. Let rest 5 minutes before thinly slicing.
  2. Spread each of the baguette halves with Wholesome Pantry Organic Real Mayonnaise. Top with slices of pork, the jalapeno and cucumber, the Quick Pickles, and a handful of Wholesome Pantry Organic Cilantro.
