Ingredients
2 tablespoons olive oil
1 large yellow onion, halved and chopped
1 whole seasoned rotisserie chicken, skin and bones removed, meat torn into large pieces (about 2 pounds)
1 bag (9.5 ounces) frozen Southwestern-style street corn
2 cups half and half
1 tablespoon chili seasoning mix
Directions
- In large saucepot, heat oil over medium-high heat.
- Add onion; cook and stir 6 minutes or until browned.
- Stir in chicken, corn, half and half, seasoning mix and 2 cups water; heat to a simmer.
- Reduce heat to medium-low; cook and stir 20 minutes or until thickened.
Makes about 5 cups.
