Summer Nectarine Creamsicle

Ingredients
4 large white nectarines pitted and chopped
½ cup water
¾ cup sugar
½ cup sour cream
1 cup heavy cream
½ teaspoon vanilla extract
1 teaspoon lemon juice
Directions
- In a medium saucepan cook the nectarines and water for about 10 minutes over medium heat. Stir occasionally to ensure even cooking.
- Remove from heat and stir in the sugar. Let the mixture cool down to room temperature.
- Using a blender or food processor, blend the nectarine mixture with the rest of the ingredients.
- Place the mixture in a large bowl and chill for at least 2 hours.
- Transfer this mixture into your ice cream machine or alternatively freeze the mixture and use a blender.
