Garlicky Steak Bites with Cauliflower Mash

Ingredients
2 New York strip steaks, cut into 1 1/2-inch pieces (about 12 ounces each)
1 1/2 tablespoons garlic butter seasoning
2 medium heads cauliflower, cut into florets
1/4 cup unsweetened oat milk
4 tablespoons unsalted butter, softened, divided
Chopped fresh Italian parsley for garnish (optional)
Directions
- In large bowl, toss steak and seasoning; cover and let stand 15 minutes.
- In large saucepot, heat cauliflower and enough salted water to cover by about 2 inches to a boil over high heat; reduce heat to medium and simmer 12 minutes or until cauliflower is fork-tender. Drain cauliflower; transfer to food processor.
- Add milk, 2 tablespoons butter and 1/2 teaspoon salt to food processor; purée 1 minute or until smooth. Makes about 5 cups mash.
- In large skillet, melt remaining 2 tablespoons butter over medium-high heat. Add steak; cook and stir 3 minutes or until browned and internal temperature reaches 135° for medium-rare.
- Serve steak bites over mash drizzled with pan drippings and garnished with parsley, if desired.
