Pineapple Shrimp and Guacamole Mini Tostadas

Ingredients
10oz medium shrimp, peeled and deveined
1 pkg 8oz Sabra Guacamole
1 can (20oz) Pineapple, drained
1 packet (1oz) taco seasoning
45 round tortilla chips
1⁄4 cup cucumber, diced
2 scallions, chopped
1⁄4 cup chopped fresh cilantro
1⁄4 cup crumbled queso fresco
Directions
1. Heat a large skillet over medium. Spray pan with cooking spray. Combine shrimp and taco seasoning in a bowl, stirring to coat. Add shrimp to skillet and saute until cooked through, about 8 minutes.
2. Top each tortilla chip with guacamole, shrimp, pineapple, cucumber, scallions, cilantro, and cheese. (For cheese you can substitute with feta cheese if desired).
