Ingredients
4 frozen precooked meatballs, thawed
1 tbsp olive oil
1/4 cup crushed tomato
1 cup Spanish Rice Cups
1/2 tbsp beef stock
1 tbsp onion, minced
1 tsp paprika
1/8 tsp salt
Directions
  1. Heat the 1tsp of oil in a pan over medium heat.
  2. Add meatballs and cook for 5-10 minutes, depending on the size. Remove the meatballs and set aside once heated through. 
  3. Heat the rice according to the package instructions. 
  4. Add onions to pan and cook until softened (2-3 minutes). 
  5. Add crused tomatoes, beef stock, red wine, salt and paprika. Make sure to mix everything together. Bring to a simmer. 
  6. Add meatballs and sauce on top of the rice. 

Recipe Tip

Top with Manchego or Parmesan cheese, if desired.
