Spanish Meatballs

Spanish Meatballs

Ingredients
4 frozen precooked meatballs, thawed
1 tbsp olive oil
1/4 cup crushed tomato
1 cup Spanish Rice Cups
1/2 tbsp beef stock
1 tbsp onion, minced
1 tsp paprika
1/8 tsp salt
Directions
- Heat the 1tsp of oil in a pan over medium heat.
- Add meatballs and cook for 5-10 minutes, depending on the size. Remove the meatballs and set aside once heated through.
- Heat the rice according to the package instructions.
- Add onions to pan and cook until softened (2-3 minutes).
- Add crused tomatoes, beef stock, red wine, salt and paprika. Make sure to mix everything together. Bring to a simmer.
- Add meatballs and sauce on top of the rice.
Recipe Tip
Top with Manchego or Parmesan cheese, if desired.
