Jalapeño-Lime Cauliflower Rice Bowls

Ingredients
1 tablespoon bowl & basket Extra Virgin Olive Oil
3/4 pound 93% lean ground pork
1 large jalapeño, halved lengthwise, seeded and finely chopped
1/4 teaspoon bowl & basket Salt
1/4 teaspoon Wholesome Pantry Organic Black Pepper
2 packages (10 ounces each) frozen bowl & basket Steam in Bag Riced Cauliflower with Garden Herbs
2 tablespoons fresh lime juice
1 1/2 tablespoons chopped fresh cilantro
1 teaspoon lime zest
1 medium avocado, peeled, pitted and thinly sliced
1/2 cup shredded carrots
1/2 cup sriracha mayo
1/4 cup sliced green onions
Toasted sesame seeds for garnish (optional)
Directions
- In large skillet, heat oil over medium-high heat. Add pork, jalapeño, salt and pepper; cook 5 minutes or until pork is browned, breaking up pork with side of spoon. With slotted spoon, transfer pork to paper towel-lined plate; cover to keep warm. Makes about 2 1/4 cups pork mixture.
- Prepare riced cauliflower in microwave oven as label directs. In large bowl, toss riced cauliflower, lime juice, cilantro and lime zest. Makes about 4 cups riced cauliflower mixture.
- Divide riced cauliflower mixture and pork mixture into 4 bowls; top with avocado, carrots, sriracha mayo and onions. Garnish bowls with sesame seeds, if desired. Makes 4 bowls.
