1. Cook Rice Noodles in boiling water 4 minutes. Drain noodles.
2. Meanwhile, Stir-fry shrimp (or chicken) in hot oil in nonstick skillet over medium-high heat until fully cooked. Saute shrimp for 3-4 minutes, and chicken for 8 minutes.
3. Reduce heat and stir in sauce and green onion
4. Serve over hot cooked noodles. Top with optional bean sprouts, peanuts, cilantro and lime wedge if desired
