Avocado, Apple and Apricot Spinach Salad

Ingredients
1 Avocados From Mexico, cubed
2 large apples, sliced
4 radishes, sliced thinly
8 cups baby spinach
8 each dried apricots, chopped
2 oz goat cheese, crumbled
4 tbs walnuts
¼ cup olive oil
2 tbs apple cider vinegar
1 tsp Dijon mustard
1 tbs ginger, minced
Directions
1. To make dressing: Combine olive oil, vinegar, mustard and minced ginger.
2. In a large bowl add spinach and top with chopped apples, spinach, radishes and apricots.
3. Sprinkle avocado, goat cheese and walnuts on top and drizzle with salad dressing. Spritz with the juice of 1 lemon and serve.
