Ingredients
1 cup Cottage Cheese
1 cup quick oats
4 large eggs
1 tsp baking powder
1 tsp hemp seeds
1 tsp vanilla extract
4 oz lemon yogurt
Directions
- To blender add: cottage cheese, oats, eggs, baking powder, hemp seeds and vanilla extract. Blend until combined.
- Heat large nonstick skillet or griddle over medium-low heat and spray with cooking spray. Drop batter by 2- tablespoon scoops onto skillet. Cook 2-3 minutes; until air bubbles appear on top. Turn and cook additional minute or until golden brown.
- Serve pancakes topped with a high fiber fruit like berries.
