Maple Pecan Roasted Sweet Potatoes

Ingredients
2 (2 lb) bags Bowl & Basket sweet potatoes, peeled and cubed
1-2 tbsp Bowl & Basket olive oil
4 tbsp Bowl & Basket unsalted butter
4 tbsp Bowl & Basket maple syrup
½ cup candied pecans, chopped
Directions
- Preheat the oven to 425 and line one large baking sheet with aluminum foil. Toss sweet potatoes with olive oil and spread out in an even layer on the prepared sheet.
- When the oven is preheated, roast potatoes for 10 minutes, or until just tender. While potatoes are roasting, melt butter and maple syrup together in a small saucepan over medium low heat.
- Remove potatoes from the oven and drizzle maple syrup butter mixture over them and toss gently to coat. Return to the oven to roast for another 5-7 minutes or until caramelized.
- Top roasted potatoes with candied pecans and serve.
Note: to candy your own pecans, toss pecan halves with equal parts melted butter and maple syrup and toast in a 375 degree oven for 5-7 minutes. Let cool before chopping and using in the recipe above.
