Ingredients
1 jar (7 oz) Reese Spicy Caramelized Onions
Olive oil, as needed
1.5 pounds of chicken breast, sliced into bite-sized pieces
2 large bell peppers, sliced (choose from red, yellow, orange, or green for variety)
2 jalapeño peppers, sliced (optional, for extra spice; substitute with green bell peppers for a milder version)
1 large onion, sliced
Juice from 1/2 lime
12 tortillas, warmed
Chopped cherry tomatoes
Pico de gallo
Homemade guacamole or avocado slices
Hot sauce
Shredded cheese
Spicy chili flakes
Fresh chopped cilantro
Directions
  1. Marinate the Chicken: Mix olive oil and fajita spices in a large bowl. Add the chicken, ensuring it's well-coated. Marinate for at least 5 minutes, ideally 30 minutes, or overnight in the refrigerator for best flavor.
  2. Cook the Chicken: Heat a cast iron pan over medium heat and add olive oil. Cook the chicken 4-5 minutes per side until done. Remove and set aside.
  3. Sauté the Vegetables: Add more olive oil if the pan is dry. Sauté the bell peppers, jalapeño peppers (if using), and onions for 7-8 minutes until tender and slightly caramelized.
  4. Combine and Warm Through: Return the chicken to the pan, add Reese Spicy Caramelized Onions, and heat until warmed.
  5. Finish and Serve: Remove from heat, squeeze lime juice over the mix, and serve on warmed tortillas with your choice of toppings.
