Suggestion Before cooking, sort split peas to remove small stones or soil. Rinse under running water. How to Prepare Sort and rinse blackeye peas. Place in a large pot. Soak: Add 3 cups of water for each 1 cup (1/2 lb) of blackeye peas, soak as desired, below; rinse and drain before cooking. Quick: Heat to boiling; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Overnight: Cover; let stand 6-8 hours or overnight. Cook: In large pot, add 3 to 4 cups of water for each 1/2 lb soaked blackeye peas. Heat to boiling. Reduce heat, cover and simmer 1 1/2 to 2 hours or until desired tenderness.
