What is Birch Bending? Birch bending, like pancake making, is a great American tradition. Birches are slender yet supple trees that will bend down and return you to the ground when you climb them, like a fishing pole under the weight of a catch. As a young boy in Maine, our founder Matt spent his summers bending birches. Years later, he would carry that same playful spirit to his love of pancake-making, and eventually, to the brand he hoped to share with the world. After all, as Robert Frost said in his poem "Birches": "One could do worse than be a swinger of birches."

Preparation & Usage

Just-add-water Now let's make some pancakes All you need is water! Mix 4" Pancakes: 5-6; Mix: 3/4 cup; Water: 2/3 cup 4" Pancakes: 10-12; Mix: 1 1/2 cups; Water: 1 1/3 cups Make Mix until just combined. Cook over medium-high heat on a preheated, greased skillet, flip once, and serve when golden brown. Prefer Waffles? To make five-to-six 4" waffles, blend: 3/4 cup mix, 2/3 cup water, and 1 1/3 tbsp. oil. Cook according to waffle iron instructions.
