1. Preheat the oven to 365F
2. Cut the eggplant in half from top to tail
3. Score the eggplant into diamond ridges
4. Stuff as many tin sliced garlic into the diamonds cuts made to the eggplant
5. Using an oven safe skillet, brown the exposed side of the eggplant at high heat in 1tbsp olive oil. Check to see that the eggplant plat is being browned as evenly as possible. When finished, leave the eggplant halves in the pan, exposed side down, heat off.
6. Drizzle the remaining olive oil into the top (diamond cut) side of the eggplant. Reserve ½ tbsp for plating)
7. Mix the soy sauce and brown sugar together until sugar is dissolved and drizzle this soy mixture in the diamond cut side of the eggplant. Move the eggplant around so that the soy mixture gets onto the bottom. If the pan is still hot the soy will sizzle.
8. Bake at 365F for 30 mins until the eggplant is tender.
9. Remove only the eggplant from the oven and plate. Drizzle with the remaining soy mixture and Dust the top off the eggplant with the nutritional yeast, let rest for 10 min before eating.
