1. In a large bowl, combine pork, chives, minced garlic, ginger paste, soy sauce, rice vinegar, sesame oil and salt and pepper until well combined.
2. Place about 1 ½ tsp of pork filling into the center of a dumpling wrapper. Wet the edges with water, then fold one half over the other and crimp/pinch edges to seal the dumpling. Repeat until all dumplings are formed.
3. Heat 1 tbsp vegetable oil in a large, deep skillet or wok. Place dumplings gently into the pan, being sure not to crowd them (cook in batches instead). Add ¼ cup of water and quickly cover the dumplings to steam them for about 3-4 minutes.
4. Remove lid and allow to cook an additional 3-4 minutes or until bottoms are nice and golden brown and dumplings are fully cooked. Repeat until all dumplings are cooked and serve with soy sauce or desired dipping sauce!
