1. Heat oven to 350°F and line two large cookie sheets with parchment paper.
2. In a large bowl, combine butter, both sugars, vanilla and egg and beat until well combined. Add flour, baking soda, salt and leftover candy pieces and stir until thick dough comes together.
3. Drop rounded tablespoons of dough onto prepared cookie sheets, leaving 2 inches between each for spreading.
4.Bake 8-10 minutes or until light brown around edges. Let cool on pan for 5 minutes before removing from cookie sheet to finish cooling completely on a wire rack.
Tip: You can use whichever assorted leftover Halloween candy you desire!!
