1. Prepare rice according to package instructions.
2. Preheat oven to 375oF.
3. Heat 1 tsp. cooking oil in a large skillet over medium-high heat. Add ground turkey and onions, cook and stir to break up for about 4-5 minutes, until turkey is cooked through. Add vegetables and cooked rice to the pan, stir to combine.
4. Place peppers into baking dish, cut side up and spoon stuffing into peppers. Sprinkle with shredded cheese and bake for about 20 minutes, or until peppers are soft, and cheese is melted.
