Easter Robins Nest Cupcakes

Ingredients
1 box cake mix of choice, plus ingredients called for on back of box
1 container vanilla frosting
Blue food coloring
1 tbsp Bowl & Basket Cocoa Powder
4 tsp Bowl & Basket Vanilla Extract
1 bag Easter egg candies
Directions
- Bake the cupcakes according to package directions and let cool completely. While cupcakes are cooling, tint the vanilla frosting with a small amount of blue food coloring to achieve the robin’s egg blue shade. Add frosting to a piping bag fitted with a decorative tip such as a star tip.
- Pipe frosting onto cooled cupcakes as desired.
- In a small bowl, whisk together the cocoa powder and vanilla extract until smooth. Using a toothbrush or small paintbrush, gently dip the bristles of the brush into the cocoa powder mixture and let the excess drip off, then “flick” the bristles at the frosted cupcakes to give the speckled egg decoration effect.
- Top cupcakes with 3 easter egg candies in the center of the frosting. Serve immediately or let the cupcakes sit for at least 20 minutes to allow the “speckles” to dry before storing.
